copy random single line from input.txt file to output.txt

I have a huge file containing 1000+ quotes

i.e. input.txt this is an example quote with an .. this is 2nd line and containing a ...

I would like to do a random search in input.txt and copy a single line (quote) into a file output.txt

Any idea how to approach this?
